LA CONSERVATION DE LA LEVURE

La levure fraîche Germa est un produit vivant qui nécessite une bonne protection contre la chaleur pour préserver ses caractéristiques sensorielles (odeur, couleur et texture) et techniques (force et conservation).

LA LEVURE ET LE SUCRE

Pour une pâte bien aérée, ajoutez une petite quantité de sucre à votre recette. Cela active la levure qui produit le gaz nécessaire pour faire gonfler la pâte. Attention à ne pas en mettre trop, car une quantité excessive de sucre peut ralentir l’action de la levure.

ASTUCE 3

LE DOSAGE DE LA LEVURE

Le dosage de la levure fraîche utilisé dans les préparations varie de 2% à 3% soit 20g à 30g de levure Germa fraîche pour 1kg de farine. Ce dosage peut varier selon le climat, le temps de fermentation souhaité et la composition de la recette.
