INGRÉDIENTS

  • 500g farine de blé tendre
  • 250g farine complète
  • 125g son de blé
  • 125g  farine d’orge
  • 30g levure fraîche Germa
  • 14g de sel
  • 1 à 2 cc. farine de blé tendre
  • 3 à 5 cc. farine complète
  • 20g son de blé
  • 600 à 620ml  farine d’orge
  • 150g levure fraîche Germa

PRÉPARATION

  1. Dans un récipient ou dans le bol de votre pétrin, placer les différents types de farines, l’huile d’olive, la levure Germa diluée dans un peu d’eau tiède avec le sucre. Garder le sel à distance de la levure. Ajouter progressivement l’eau jusqu’à obtention d’une pâte homogène ;
  2. Pétrir la pâte pendant 10 à 15 minutes jusqu’à obtention d’une pâte molle et très extensible ;
  3. Couvrir la pâte et laisser reposer jusqu’à ce qu’elle double de volume ;
  4. Dégazer la pâte et la diviser en pâtons de taille égale puis les rouler dans la semoule d’orge (Balboula) ;
  5. Aplatir les boules et les laisser lever dans un endroit tiède pendant 45 minutes ;
  6. A l’aide d’un vaporisateur, humidifier légèrement la surface du pain et les faire cuire au four à 220°C pendant 20 à 25 minutes.
